The Ruby Queen is Beach Cocktail Royalty

Fresh ingredients, homemade juices and low calorie whiskey means you’ll enjoy this unusual cocktail completely guilt-free!

The Ruby Queen is a great way to mix a nutrient-rich smoothie with an alcohol kick for a best-of-both-worlds revitalizing cocktail.

And it’s the perfect accompaniment to a beach break or poolside chill session. While it may be unusual, the Ruby Queen cocktail is easy to make in just five minutes and pretty tame to drink, meaning you get to enjoy one, two…or even three of these glasses without feeling guilty.

Developed by Rob Krueger of Extra Fancy in Brooklyn, the Ruby Queen is one of many of his creative cocktails to grace his menu. Luckily for us, he’s shared a make-it-yourself recipe so you can mix it up just as easily at home.



Simple syrup made with honey

If you’re planning to test your way through some new cocktail recipes, learning how to make honey syrup is a great way to start. Honey syrup, which is similar to simple syrup, is a great way to add a sweet flavor to any drink and you can easily make this yourself at home.

The Ingredients:

  • 3 parts Clover honey
  • 1 part water

The Method

Mix the honey and water together on the stove on low heat. Keep stirring the liquid together as it slowly heats up until the honey has dissolved into the water and started to thicken slightly. Remove from the heat and allow it to cool. Store it in a sealed bottle or container and keep it in the fridge to keep it fresh.

Assembling the Ruby Queen

The Ingredients

  • 1 ounce of fresh red beetjuice
  • ¾ once honey syrup (see recipe)
  • ¾ ounce/half of a fresh lemon for juicing
  • Sprig of fresh rosemary for serving
  • 5 ounces of Scotch Whiskey (can be substituted with gin or vodka)
  • Cocktail shaker
  • Pinch of salt

Pour all of the ingredients into a cocktail shaker filled with crushed ice. Shake the ingredients until the shaker is cold and the ingredients are well mixed. Pour the liquid through a strainer into a frozen cocktail glass of your choice and serve with a sprig of fresh rosemaryor a strawberry for garnish.

Okay, so where can I get red beet juice?

The best cocktail will be made using homemade beetroot juice, which can be made easily with a home juicer. If you don’t have your own juicer, don’t worry – you can easily find fresh bottled beet juice at your supermarket or health store.

Fresh lemon juice: It’s important.

It’s highly recommended to use fresh lemon juice rather than what you’d get out of a bottle. Handy tip? If you’ve kept the lemons in the fridge, allow it to warm up to room temperature before you squeeze it or put it in the microwave for 15 seconds. The average lemon usually holds around 3 tablespoons of juice in it so you won’t need more than half a lemon for this recipe.
