Chicken Mango Stir-Fry Makes for Terrific Beach Potluck

You’re heading to the beach for a day of swimming and sunning with friends, and you can’t wait for the fun to start. The only problem is you volunteered to bring a dish for dinner, and now you’re in dire need of a creative entrée!

This apple mango chicken is light, colorful, and packed with flavor! Best of all, it’s super easy to make.

Gather a few yummy ingredients and follow these easy steps, and soon you’ll be the beach party hero.

Ingredients

Chicken & Rice



  • 1 lb boneless, skinless chicken breast (thawed)
  • 1 ½ cups white rice

Apple Mango Topping

  • 1 green apple cubed
  • 1 mango cubed
  • 1 red bell pepper chopped
  • 1/4 cup onion diced
  • 1/4 cup cilantro chopped
  • 1/4 cup zesty Italian dressing
  • 1/4 cup fresh squeezed lime juice
  • 1 tablespoon orange juice concentrate
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon fresh garlic minced

Steps to Success

Begin by boiling water for the rice. Every package of rice may have its own directions for preparing, so follow the package for the best results!



Warm a skillet or pan on medium heat with your preferred amount of olive oil. As the pan warms, cut the chicken into bite-sized pieces. When the pan has heated, add the chicken.

While the chicken cooks, cut the green apple and mango into cubes, dice the red bell pepper and onion, and chop the cilantro.

Next, in a bowl, you’ll want to whisk the Italian dressing, lime juice, orange juice, salt, pepper, and garlic. Combine with the mixed fruits and veggies from the step above, mixing the ingredients together well. Warning: You’re already going to smell that freshness!

When the chicken is done, you’ll simply serve it over a bed of rice, cover it with that apple mango topping, and voila! You just made a delicious meal.
